  • 2 lbs boneless, skinless chicken thighs or breasts, cubed
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 tbsp tomato paste
  • 2 tbsp flour
  • 1 tsp thyme
  • Salt and black pepper to taste
  • 2 tbsp olive oil

Step 1: Prepare the Chicken

Season the cubed chicken with salt and pepper.

Step 2: Brown the Chicken

Heat 2 tablespoons olive oil in a large pot over medium-high heat.

Step 5: Add Broth and Simmer

Slowly pour in 4 cups chicken broth, stirring to combine and avoid lumps.
Return the browned chicken to the pot.

Step 6: Add Vegetables and Seasoning

Add carrots, potatoes, and 1 tsp thyme.
Season with salt and black pepper.
Bring to a boil, then reduce heat and simmer covered for 35-40 minutes until vegetables are tender and chicken is cooked through.

Step 7: Serve

Serve hot with crusty bread or over rice for a filling meal.
